more than 10 yrs fan

My long time favorite bread.




not too soft, but not too hard...really something different...



Mr Chen (or Chin)'s steamed bread.




There are few flavours but I always love to eat only Yomogi flavour.
Yomogi(mugwort) is a kind of very common wild harb.


I like Yomogi, and the bread has quite nice smells of that.



Used many eggs they said, and it tasted special,
not like other steamed breads...


Now there are Cocoa and Red Bean flavours too but I think I will only keep buying Yomogi flavour still...=P

Need to study more

Had lunch with friends at bakery restaurant.



...bakery restaurant??? maybe so...
(the restaurant offers freshly baked bread bar)


Had their bread seriously this time round and I found that
their soft breads are too soft for me while petit french bread and petit campagne are chewy.

I think I have to seriously start researching nice breads and taste to improve my taste.



Anyway, their breads and meals are still quite nice, and chatted alot of things, many laughs and laughs with friends =)


It's near to one of friend's birthday.
I didn't do much baking (bake cakes or whatever) for friends for past few years,
Sice I am learning baking, I baked Cream Kuchen for her =D



look ok done lor... finally I got to know my oven's behavior.




BUT, it was really humid and hot today,
kuchen contains custard cream...



If my friends got stomachache, it should be caused by my bread...
SORRY friend!!!

sweet bread also nice but...

It was free of charge lesson.
Baked 'Almond crunch roll'.

This bread is soft, sweet and hint of coffee taste as rolled instant coffee in dough.


inside is coffee cinnamon sugar.

Actually this bread garnish with coffee icing,
should be looks more cuter than I baked.


I was lazy to do icing...hahaha =P



Through the baking lessons, I baked quite some sweet breads,
but still I prefer to bake / eat simple bread like white bread and roll bread.

Summer fish


This Ayu is farmed one, priced less than half of wild Ayu.

This fish is 'AYU (鮎)'. Sweetfish or something in English.
This is fresh water fish and can be fished only June to Oct.


When I see this fish at the fish section at supermarkets,
I feel that it's going ot summer.


Usually you have to register for fishing Ayu.
I am not sure why but I think it's wild nature matter.

August is most tasty season for Ayu as they are going to have
their love season, after that, Ayu taste becomes not that nice.
as they are going to end their lives.


Interesting about Ayu is, the way of fishing.
Usually fishermen used Ayu to fish Ayu as they have territories.
So, if another Ayu comes into territory, will be attacked by Ayu.


Now common Ayu is farmed ones, its face is not so sharp and
handsome like wild ones.
Wild ones have nice sweet fragrance as they eat algae and only
living in clean water.


This is grilled wild Ayu. Ayu size is about 20cm.

If you visit Japan during summer, It's great to eat Ayu.
And If you see the fishermen in the river, they should be fishing Ayu =)

preference

Tried baking without teacher as I got a few breads I would like to try baking.
But those are in the free class which do baking without teacher.



After finish baking, I felt how I wished to bake the bread with teacher.




wheat bran bread. too bad, only avail on free course.


I think I prefer to have teacher's help and teaching when I am at baking class.
If not, I would prefer to practice baking at home.



I am not sure is this bread well done or not...=(




After the free baking, I met friends for cafe.


She recommend us to a cafe, which is combined shop of
cafe, gardening shop and furniture shop.

Quite cozy and relaxing with nice sweets and drinks.



nice and light chocolate cakes =)

Chatted alot till almost forgot time.
hehe =P

Shiu-chan had passed all the exams for his uni.


He called me to inform me about that,
I was making bread.

fast to eat but!

Today's baking lesson is also danish kind of bread.




'Pain au Chocolat'



This danish bread is light snack kind
while croissant is table bread.


For this bread (or should I say danish?),
used normal unsalted butter,
and its amount is more than croissant.
(teacher said, croissant dough is consider still lean)


Process of kneading is just same as croissant,
took about 3 hours to ready for making shape.


During summer unable to make unless
make the room very cold, we said and laughed =P


Tasted not that light and crispy as croissant.
Is it I did't do well??? or because of butter???
