Super fresh.

Next door neighbor shared catch of the day, her son went fishing from 3 am in the morning.
She gave us 7 horse mackerel.


They are so fresh, of course, eyes are never become cloudy, not only that, body shines rainbow colour!!
Honestly speaking, it was my first time seeing such very clearly see the rainbow body horse mackerel!!



















Well, it is super fresh, I thought of making sashimi but I just opened stomach, salt it and simply grilled.
The fishes were so tender texture and tasty =)

Mee Sua

I was asked to ask my mum to cook Mee Sua for me with 2 eggs, So I asked about it to my mum.

Mee Sua is almost same as Soumen (そうめん), I thought of using Soumen but I decided to buy Mee Sua and bring it back to Japan.

My mum prepared delicious and precious Kelp soup stock for me, the kelp was bought more than 20 years ago and she forgot about the kelp. It developed real "Ajinomoto", umami in its body.

It supposed to be a normal easy cooking, however, the delicious kelp soup stock and bonito soup stock made the simple Mee Sua into very traditional Japanese good soup noodle.

In the evening, I cooked Bak Kut Teh for mum,
I bought the herbal Bak Kut Teh mix back, bought Pork ribs and big garlic.
Whoa, this garlic, just a one glove, costed 200 yen...

Follow the instruction, simmered them for about 2 hours under small fire.

We had it for a part of dinner.
Surprisingly, it supposed herbal but still very peppery but the taste was great.
Shiu-chan dared to say it is his best Bak Kut Teh he ever had.

Actually, I wanted to cook very herbal type like Shiu-chan's mum cooks as I really love herbal Bak Kut Teh than the peppery one.




















Anyway, my mum also enjoyed the soup =)

Ibelico.

When we went my home town's....like a cold storage kind of supermarket.
It is just normal supermarket.

Yeah, it is truly normal supermarket.





But then, there was a slices of pork...
They wrote, 'Ibelico pork'


Wow! really!



















Ibelico pork loin steak.


Price was pretty normal price....
So, of course, we bought it and immediately salt, pepper to pan fried.



umm....I can imagine how scary and dangerous Japan's normal supermarket is...

Hand rolled sushi.

Shiu-chan haven't tried Temaki Sushi (Hand rolled sushi), and my mum suggested to do that.
She bought a few blocks of fish, sliced them together with cucumbers.

Get the rice seasoned and ready the Nori seaweed,
Let's enjoy Tamaki sushi!! =D


We all enjoy making and eating it.

Thanks to my mum always!!!

Sweet Sake.

My mum said she so fan of making Sweet sake (actually almost no alcohol) this year.

This is called "Amazake" and children commonly drink during Girl's day festival (Hinamatsuri).
I love to drink it and always look forward to drink it during that period.




Not too sweet, and helps to warm up cold body during winter =)

When I go for fishing to Setouchi sea during summer,
Sometimes fish, 'Gizami'.
('Bela' is more common name)



colourful fish like tropical fish. male and female is different colour.

This fish, popular cooking method is marinate with vinegar.
Usually deep fry and marinate for a few days.
My family style is grilled and marinate.


Vinegar sauce is 180cc vinegar, 120cc sugar and 2 tbsp soya sauce.
(should be like that...)



1 week marinate, bone also can be eaten.

Refreshing food for tiring summer!!

fishy?

Recently, there is a news...



Documentary movie : 'The Cove'



This movie, forcused one of town in Japan.
Showing that people there is catching dolphins for eating.


What I got to know about this town is,
for their lives, dolphin meat is not a special meat.
they are eating the meat for long long time and it's their own culture.

Just like for us eating whale meat...

I am not sure whether this movie going to show in Japan or not.
In Singapore, it will be showing from 27 Aug '09 onwards...
(tomorrow then!!)
If I got a chance, I would like to watch it.



I didn't know that whale and dolphin is high in mercury...
(come to think...they are on top of food chain...should be high in mercury...)
I only know it is high in protein and low in fat.


my mum and I prefer to eat whale meat than beef.
maybe we should eat less whale meat...



umm...



but anyway whale meat is not always able to find...



whale meat has fragrance...not like beef.

anchovy = iwashi?

Found Koiwashi (small iwashi : Engraulis Japonica),
It looked tasty...


Long time I didn't eat any of this,
let's get some and try cooking! =)



small and cute size (knife is normal multi purpose kitchen knife)

I didn't know until recently that
this Iwashi sashimi is famous in Hiroshima.
This fish can be eaten in Sashimi only if it very very fresh.


We are so common to eat it but other regions may not.




Do you know how to prepare for sashimi of this fish?
use Sashimi Knife? you may think so???



My family style is use spoon.
Traditional style is use finger,
while common style is use spoon or thin plastic card.



use teaspoon, easy to strip off flesh.

use those to strip off flesh of iwashi.
from the head towards tail, head, bone and intestines
will be left. no need to care.

after that, rince sashimi at least 7 times to take away fishy smell.




They say :
rince 7 times and Iwashi will becomes taste of Tai (Sea bream).




This sashimi, can be eaten with Soya sauce,
but I prefer to have it with Ponzu sauce (venegratted sauce).
Taste like Horse Mackerel but I think taste more milder than that.



Used half of pack and I also cooked Iwashi simmered with Ginger sauce.
Just chop away head and intestines, and then cook with grated ginger, soya sauce and Sake (Japanese rice wine).










Easy common food, but tasty =)
Remember to check whether this fish can be eaten in Sashimi or not first
if you want to have it in Sashimi.

6 big fresh scallops abt S$7

My mum most of time buys seafood, not meat.




She bought salt seasoned scallops,
it is also my favorite kind...


which is whole scallop,
together with roe and scallop skirt.



I grilled in fish grillar and realized that
I should pan fry or something as it became
hard...





not only salt but also hint of lemon...



I was too lazy to pan fry...=P
