Beef Bourguignon, again.

Shiu-chan found looks nice Beef brisket and tried to cook Beef Bourguignon again.


this time round, he had take his way to cook.



served with baguette felt like eating with with red wine.


It was much teastier than last time and he was so happy about it=)

Les Amis's Canteen

We stepped into a open concept restaurant,
it named [The Canteen].



ehh??? sounds familiar...



oh, this is one of the Les Amis group's restaurant.



black board writings are so cute!!

Their restaurants are mostly looks so expensive,
(should be very expensive)
but this restaurant offers casual dining.



Grilled chicken w tomato sauce vegetables...not pasta...

Taste also casual?

Super Camellia English bread

Baked English bread with Super Camellia flour.



tooked too long 1st proofing time but pretty nice oven spring.


I gave whole loaf to Shiu-chan's.
I don't know the taste of that bread at all but he said is tasty.



It's quite hard to find powder skimmed milk here, I used UHT milk instead.


Note :
* Super Camellia 250g
* Instant Dry Yeast 1-2g
* Sugar (caster or fine) 10g
* Salt 3g
* Fresh Milk 50g
* Water 120g



Next time I should keep small piece for myself testing.

Gelato

Gelato shop in ION.


Small size @ $5.90.
Quite expensive but you can choose 3 flavours.



enjoy 3 flavours at $5.90 is ex but sometimes I may buy.


We choose Mixed berries Yogurt,
Strawberry and Green tea flavour.


My friend's recommendation,
Rice flavour was not available today.


Green tea was quite nice,
I like strawberry flavour =)



It should be my first time to have Gelato in Singapore...next time I wanna try rice flavour and more!!! =P

water oven

My Healsio.




I think I cannot survive without microwave oven...so used to use.


31L capacity and tall type.

I was considering to buy Panasonic water oven,
it also 30L capacity, but it is wide type.
I need height, choose Healsio.


came with hamper, I think it is because
christmas season...


my first hamper...hahaha...but most of thing I have better ones...

Too bad, there is no TOSHIBA stone oven in Singapore...
if not, I will definitely buy that.

Boeuf Bourguignon

Shiu-chan excited to cook french cuisine,
he cooked 'Beef Bourguignon' inspired from Julia Child's recipe.


It is known as wine simmered beef.
Base of beef stew.


Simmered for 3 hours and then rest for over night.
Simmered again in the morning then we had it.



use tail should be melty nice...

Beef was quite hard, but tasted great =)


We really realised that cooking ang moh dish is very expensive in Singapore...
Japanese cooking too...

what a waste...

There is no reason not baking bread after buying 'Healsio'.
Anyway I brought back Super Camellia from Japan (supposed to use it in Japan for baking practice but no time to use all), just try to bake to find Healsio baking habits...


I added a pinch of Citric Acid...


Just a pinch...



It was big mistake...



eh? how come no gluten film???



eh? how come never become big???



after finish baking, the bread was very very very sour!!!



a pinch of citric acid was too much...



Like that, of course, yeast cannot be active, of course cannot make gluten film...='(



I somehow felt it may not be success...

Wasted precious flour...



after such shocked incident,
baked another bread as usual.


This is well baked...



just baked...taste much better when it's cooled down.

I found Super Camellia flour is silky texture and when it is room temperature, wheat fragrance is better than when just baked.

Flavourful but quite no taste.

4-5Kg turkey....it's first time for me to have whole turkey....

shiu-chan was keep saying, Tasty! tasty!!

baking with pre-mix.

Shiu-chan bought bread pre-mix.


I am not used to use this kind,
just for try try...



only proofing for 1 time. chewy and tasty.


the smell of mix and after baking,
it's makes us believe that should be same as our favorite restaurants'. Nice dried tomato and cheesy fragrance.


while I was baking bread,
Shiu-chan was making marinated chicken.


he marinated for one night, just follow what he taught when he attended trial cooking class. But it was whole chicken. He this time round used 2 chicken thighs.




looks tasty but..................


Done, the chicken was so so so so so SALTY!!!



Confirm, you'll have high blood pressure!!!





...next time only marinate for 2 hours lah, hor???

Famous IKEA's...

When we went for shopping at IKEA,
We tried its famous 'Swedish Meatball'.



wonder what Ling berry is...nice too...


I liked its mushroom sauce,
meatball tasted just like meatballs in Japan.


come to think of it,
this kind of meatball, not easily can be found in Singaproe.



Shopping at food corner, found huge biscuit!!



really huge!! around 30cm round i think...


It's called Rye bread, tasted simple and very rye,
feel like having it with soups...=P

texture and tasted like a candy floss

After viewed resale HDB flats,
I went to breadshop nearby and found interesting bread.



"Bamboo Chacor Bread"





I bought green tea red bean bread too, it was also very sweet...




...I think I should buy.



totally black in colour,
tasted very sweet...like snack bread.


I thought it should be table bread but it wasn't....
really sweet it was...

I dun't think it is, in Japan...

My God Bro's gal,
I thought she jus delivered not long ago but,




she is already 1 years old.





it's common in Singapore to have this kind of shaped cakes.

Boutht a christmas tree as I never had/displayed before in Singapore.




small ornaments are not so easy to find. bigger is more.


Shiu-chan's family never do it,
I like to enjoy christmas since I was a child.




It's my dream to have big tree, and I choose not too tall but not too short tree together with some ornaments. Also bought a small wreath and fake poinsettia.



Christmas is public holiday in Sinagpore,
why not enjoy then!!

we must be fan of.

Oomphatico's for lunch with shiu-chan's friend.


It was my 4th visit to there since this nov.



There is Executive lunch course, 2 or 3 course.
for 2 course, you can order either soup + main or main + main.
3 course is, soup + main + main.

so, you'll see, 2 course is value for money!!!


Shiu-cha's friend, K-kun,
seemed very impressed by roasted duck risotto of roast duck. It was reminds me of roast beef...other dishes also tasty as usual =)


Porchini mushroom and roasted duck risotto with thick cheese taste.


I had Tiramisu for dessert and it was so thick and eggy taste. But it's still not too thick. I will not feel sick of eating that...=P



eggy eggy!! i liked it alot!!


Great to know we had nice meal again there!!!



By the way K-kun, gave me oven mitten.
it's so unique design, will protect chest and both arms...



long enough to wrap shiu-chan...

where to get the cage?

There is a place uncles gether during weekend beside Link Hotel.


They'll bring along their little birds,
and enjoy listening their cute sound.



the birds are cute, but the cage, it's very nice and fine curvings on it. I am so impressed to it and felt like getting one of if when I saw them.





must visit bird shop, is it??


It's something makes me feel nostargic scene among the Tiong Bahru road.
Nice to strol around that area =)

Centre Ps, another time.

I was staying at Link hotel again,
this time round, I should go to [Cetre Ps] shop as it's nearby hotel.


From Link Hotel to Centre Ps,
Across the road and go straight from Nostargia hotel side, passed Tiong Bahru Market & Hawker and continue to go straight. You will see Centre Ps sign board in front of you.

We finally could have chance to buy their signature cake,
[Chocolate Grand Cru Royal].



behind is mont blanc...haven't find nice one in Singapore yet.

Also try try bought Macarons.



Black Sesame, pear (maybe?) total 5 flavours...quite big size

We thought of giving macarons to my friend but turned out we were unable to meet her, we had them by ourself instead...lol



so far Carousel is more our liking taste...(<< excuse...=P)

Aqueen Lavender

When taking flight from Narita, the arriving time will be 6pm plus and so, I decided to stay budget hotel.
It's budget, but it's newly opened business hotel chain in Singapore.


one night is $78 nett!
(No breakfast)


This Aqueen Hotel Lavender is just opened 3rd quater 2009 and it's really new and cozy kind of rooms...


32 or 37 inch LCD TV, workspace is beside of it. quite big window.


complemently water, coffee & tea...got slipper too!

Location is not very convenient, still its first hotel in balestier is better as it's jus a min away from Bus stop. but it's near from Lavender Food Square =)

Keema Curry man (bun) from LAWSON (Convenient store).


During winter, it's so temptating for me to eat [** man].


When I was a student,
I was often buying 'niku man (meat bun)' from Mister donut...



this curry man is not so high calories.



quite spicy too...







Oh, Ya hor...I think I never seen curry man in Singaproe...
I think mostly either char siew man or bean paste man...


I was loved to eat pizza man and curry man...=P

380!!!

Suddenly I had to go back to Singapore.


I had some reason, I took flight from Narita.


So,


It's time for me to experience A380!!!




I will be taking this looks already heavy boy.
my seat was main deck (1st storey) and luckily there were no passengers beside my seat. I could relax all the way =)



simple yet nice design.

Remote Controller and display compactly built-in to front seat, about 10inch display was clear and big. you can even clearly see what front passenger watching.


eh? display almost same size as my netbook then!!!



inside the curtain is the 'SUIT CLASS'...


feeling of taking A380 was, quite shaky compare to B777. Maybe I'm used to take B777, and like its feeling. It was really 'Brand New' feeling all the way from taking off to landing.


One thing regret was something wrong with flight path and it didn't work till landing...stopped it around manila even arrived in Singapore...hahaha



On the half way, I suddenly felt that "this is the very new plane and pailots and maintenance engeneers experiences are much lesser than old planes...
come to think of it....it's a little bit worry to take new plane although they trained very very well..."


Maccha is a very small hearted...=P

It's been about 3 years since I saw Mt.Fuji from Shinkansen.






now it's winter and of course,
Mt.Fuji got snow crown on its summit.



I think the beautiful point of Mt.Fuji is
this snow crown and mountain's long skirt.



When am I able to see it again???

today's bread.


Yeagle 50% + Stone ground 50% = 300g
other ingredients same amount as normal table bread.


12hrs 1st proofing since last night.



took slightly longer 2nd proofing...about 1hr +...


below bread used left over flours...Don't waste then.
Super King, Yeagle and Kitano Kaori = about 60%.
CUOCA wholemeal flour and stone ground = about 40%,
total amount is 250g.

Butter used 20g, and other ingredients were normal amount.



I was meeting with friend and took about 4 hrs for 1st proofing.


left over but still become normal bread...
not bad hor =P

amount of ingredients are same as yesterday.



didn't pour hot water to dried blueberries...just rolled it.


rolled Blueberries in it.
shape it to bagel.

texture is quite light then.

Bread of the day

Stone ground strong flour fever!!!
amount of ingredients are same as normal table bread, only flour amount is 300g.
Yeagle 50% + Stone ground 50%.

for my mum.

contains camembert cheese. 220deg 17mins.


rolled shape only. 220deg 17mins.
proofed in room temp (12-17deg) since last night.


for my good friend.

little bit charred on top...mengo! fren...200deg 35mins.



Middle ground flour is suitable for maybe hard bread.
not very nice on table bread, I thought.

zusshiri (dense)...

Today also I bake.

Releasing frustrated feeling of quarrel with shiu-chan and to study baking/proofing in winter/cold condition.


Yeagle 50% + stone ground 50%. Campagne style.

Amount of other ingredients are same as normal table bread, only used 300g of flour. Lazylazy bake, roughly check temp and adjust baking temp...210deg 25mins about...


NOT BAD HOR!!! =P



same amount as above bread.

continuously bake, placed in mould and took 2nd proofing time slightly longer.


not bad too...quite dense bread.


I think for placing mould, use 250g flour is still prettier and nicer.


Baking in winter is just needs longer proofing time and warmer temp water, other part is not much different...

Stone Ground wholemeal flour

Bought this flour.



Canadian 15% protein flour is also from same brand

Organic wholemeal flour.
about 14% protein I think...



I am not very interested in Organic but I just heard that stone ground flour is very nice fragrance of wheat and wanted to try to use it then.


I realised that I seldome see 'finely ground' wholemeal flour in Singapore...is that just I didn't check enough????


This stone ground flour was middle ground, and it wasn't easy to handle.


yeagle + stone ground 40%

Taste....I couldn't feel the defference of the fragrance...
(I think I shouldn't use yeagle flour...)
