Oatmeal cookies.

Feel like baking Cookies.

Added 30g oatmeal for 170g cake flour.
Other ingredients are same as usual,
Unsalted butter 100g, Valrhona72% Chocolate 50g and Sugar 60g.

Measure into 5g each for mini size, could bake about 90 pcs.

Siew Mai

Shiu-chan's must have in Tim Sum is Siew Mai.

He decided to try making it.
I requested him to use Beancurd Skin instead of Siew Skin.

Ingredients are:
*Minced pork meat
*Water Chestnut
*Dried Donko Mushroom
*Carrot
*Chinese Coriander

Mix well all the ingredients, season with Sesame oil, Chinese cooking wine, salt and pepper.
Rest for marination, wrap with wet beancurd skin and steam it for 10-15mins.

Done!

Easy and tasty!! =D

Burratina.

We are so surprised to find Burrata Cheese in ION Jason's super market!!

I search online, this Burratina is smaller version of burrata cheese...
Just wondering how is the taste like...
Is it same as Burrata cheese since just smaller version...???

CNY 1st Day.

What my favourite thing during CNY 1st day is,
To have nice meal at Father-in-law's parents house.

I love their vegetarian chinese miso flavour dish!




















After visiting them,
We headed to Shiu-chan's 2nd uncle house for feast again.


They cooked Pun Chai by themselves, this was actually tastier than commercial one.
More healthy and hearty =)

Wine -> Whiskey.

@yu invited us for dinner after cafe time,
we went back together to her house and had tasty dinner prepared by her =)


Had nice chit chat with them while sipping wine and whiskey.
This time round, they went to Sake brewery and Whiskey distiller.

They even got some snacks and sweets for sharing with us.

We always delighted by them, really thank them for their treats and sharing their precious time =)

Chiffon Cake.

I tried to bake Chiffon cake first time in my life.
The reason is simple, I don't have Chiffon mold.

Well, I searched without mold recipe in Cookpad and baked it.






















This is using rice cooker to bake.
Looks not so nice but tasted so gentle and nice sweetness.

After having it, I realized that I missed out an ingredient to add.
I think next time I should get mold for baking!!

imo-mochi

This was given from my Japanese colleague.
I've never had this before, and when I heard the name, I thought it is something like, steamed diced sweet potato wrap with Mochi.

But the thing wasn't.
It was steamed smashed sweet potato knead with Mochi.
I was told there are a few types of Imomochi.



















The mochi was smooth and nicely matches with slightly sweetened Kinako (bean flour).

Thanks for colleague to share such nice stuff with me!! =D

Pettit Cup Cake.

I got share of cup cakes from Colleague,
It is so tiny but nicely baked.





















The texture is moist from top to bottom,
not too sweet and nice for coffee or tea =)

Thank you very much for colleague!!


I really admire people who bakes cake well....

I am really poor in baking cakes...Maybe I should try baking more often next year...

Early X'mas party.

We had it with friends @ friends house!

It was first time having @yu's hubby pasta and tasted nice =D

Maybe someday Shiu-chan and he can cook together =P

Had nice chat, food and wine,
really gathering with friends are so enjoyable.

Wine Gathering.

Mr. & Mrs M and K-kun visited our house for dine & wine gathering.

Shiu-chan was very looking forward to it and he prepared the dishes from yesterday night.

*Saba Misoni (Mackerel simmered with Miso),
*Marmalade pork (Braised Pork with Marmalade sauce),
*Shiro ae (sweetened tofu with vegetables)
*Nama su (Vinaigrette octopus with wakame and cucumber)
*Sumashi Jiru (kelp based clear soup with tofu and vegetables)
*Japanese rice (from my colleague's hometown)

We were worry that those dishes are very typical Japanese home cooking and they might not able to take the taste as got sour and fishy taste.

Glad that they enjoyed it and all dishes are gone very fast =)


After the meal, although we are already pretty full but continue to Wine session.
Had nice chat about wine and Mr. M's wine trip to Hong Kong.

K-kun bought a whole cake for Shiu-chan for his belated birthday celebration.


We really always enjoy having time with them and thank them for their kindness and nice time.

Bak Kut Teh

I got Herbal Bak Kut Teh mix, cooked it.
Generally, Bak Kut Teh uses Pork ribs, I used loin meat instead.

My mother-in-law add yam, I also heard that lotus root is matching,
I added white radish and carrot.

My Bak Kut Teh looks so healthy!!
Totally don't look like Bak Kut Teh!



















Anyway, taste was nice herbal and sweet taste.

Taste of Love & Care.

I was so down by the appendicitis, Shiu-chan was giving me so much cares.

Today he cooked pork ball porridge and pumpkin miso soup for me.
He is really good in cooking porridge =)

Miso soup was the one that my mum cooked and since then shiu-chan loves to put pumpkin in it.

Your meals are not only tasty but also tasty + full of your love and care.

Tonic Soup.

After start TCM, I also start changing my diet seriously.
I started to boil Chinese herbal soup often.

It is pretty interesting to know and boil soups, with Shiu-chan's advice.

I got to understand that those Chinese herbs has its unique properties, I think any herbs are same. Whichever is western, Indian or Japanese.


I think I am more into Chinese soup now.

Instant Chicken Rice.

I bought Chicken Rice mix for my friends previously but we have not try using it to cook and try by our self yet.

We thought we should try if not maybe not nice how?


The mix is simple one, we just add mix, rice, water and chicken, then press rice cooker start button only.

We used chicken fillet to cook it, the mix was quite nice and we also enjoyed the chicken rice =)



















Just only regret that this mix does not come with grated ginger, chili sauce and dark soya sauce.
(It is almost impossible to get chicken rice chili and dark soya sauce in Japan)

Petan Porridge.

Shiu-chan suddenly cook porridge.


He sometimes cook porridge so quickly.
I think it's because he is Cantonese.




















His porridge is tasty too =)

Scones again.

Baked scone again...
it's so easy to bake and it's pretty fun!! =)





















*Plain English scones*
*Cake flour - 100g
*Unsaleted butter - 50g
*Salt - 1/4 tsp
*Sugar - 1/2 tbsp
*Baking Powder - 1tsp
*Milk - 40ml

1. Blend cubed chilled butter with flour, salt, sugar and baking powder.
(Use pie blender or folk, knife to prevent butter to be melted)
2. Once done, add milk and blend well.
3. Make into one dough, rest in fridge for 30mins.
4. Rolled to 2cm thickness and cut(or use scone mold) into 6-7 pcs, brush milk on top.
5. Bake with pre-heated 180 decC oven for 13-15mins.

De Cecco.

After having De Cecco pasta,
He totally love in it.

Regret that Jone's the grocer, Culina, very limited shops are selling it in Singapore.
But what a wonderful thing!
NTUC Finest sales that!! furthermore it is better quality one!






SO Shiu-chan happily bought it =)

Bottarga Pasta.

Shiu-chan cooked Bottarga Pasta, again.

This time round, he did different method from his first time.





Umm...wonder if Italian parsley was too big or so...
I think cook Bottarga and parsley through is tastier.


Nevermind! still got chance to try =)

Chocolate Macaroon

I tried to mix cacao powder into macaroon mixture.


Did more manaronage to make it smoother texture too.
It turned out needed to dried up very long, like 2 hours and more.


I took 2 and half hour but still some macaroons were cracked.





Well, the taste is still not that bad!
I will try again soon =D

English Scones.

After having nice soft and fluffy Australia style scone,
Felt like trying to bake English scone.

I have no much confidence baking scones,
Especially under tropical weather.



Half way blending the butter with table knife,
I realized that I have powerful tool, called Skepper!!



So now I don't have to get pie blender to blend flour and butter.
I have great partner, Mr. Skepper=D







With his help, I could bake quite successful scones without let butter melt.
GREAT! Mr. Skepper!!!
