Ma Po Tofu

Shiu-chan didn't sartisfy with Lee Kim Kee's Ma po tofu, I suggested him to try Cook Do's ma po tofu which I used to cook and eat sometimes when I was young.




reminds me of eating this with alot of rice...keke


surprisingly he preferes this.



"Cook Do's taste more similar to Kantonese one, Lee kim kee's got feeling of tangue numb, guess it if from a kind of chilli"

I was walking down from Orchard to City hall.
It is my normal routine walking.

bread of yesterday

baked breads for Shiu-chan's friends.



Haruyo Koi taste couldn't win camellia...but mochi mochi =)

Super Camellia 60% + Haruyo Koi 40%.
same recipe as table bread but added 50g fresh cream. Used SCS unsalted butter.




not so dark outcome. maybe in Singapore is guiness is best?

Used Asahi Black for beer bread.
Prima bread flour 60% + organic wholemeal flour 40%.
SCS butter 20g. Added 20g of sugar but bread became sweet. I think I better reduce sugar next time.



Both baked at 200deg for 15mins.

aft 3 yrs.

Destress buffet @ Aqua Marine.


oops...+ 3kg since I returned to singapore...


Puyo Puyo already...



their taste was still same from when I went there 3 years ago.
I was happy with that.



desserts...from western to asian. liked potong! =P

Shiu-chan was happy about Oysters as they were fresh and tasty.I tried raw oyster again there and found it tasty too...but still I am not fan of raw oysters.



oysters always run out fast...keep refilling.

He mentioned that there is no "main" kind of dish. I guess he needs something more meat...not appetizer kind of meat but main meal kind of meat.



Actually we supposed to come here with a friend but it was fully booked and we couldn't get seat. I was really wanted to go for buffet, just wanted to try our luck without booking...didn't dare to ask friend to come together as there's no gurarantee.


There's UOB 1-for-1 weekday lunch till end of march.


so huge tabasco bottle!!

I think it's very worth if you are oyster lover.

never expected!!

I was jalan jalan at isetan scotts,
and then saw poster at supermarket.


"Puri Puri no Kaki"
(bouncy oyster)


Looks familiar...this word...



realised that saling frozen oyster from Setouchi sea.



I never imagine I could be able to find oyster from my region till today. I was too happy and excited to find it, quickly SMS to my friends...


Bought breaded deep flied oysters for Shiu-chan and friend.



tasted as usual. reminds me of shiu-chan easting it in spring fest.

Company located in Onomichi City, it's eastern side of Hiroshima Pref while my place Hatsukaichi City is located in western side.
The oyster is only stated that from Setouchi sea, guess it's mix of various area of the sea.


Anyway, we bought 2 packets of this frozen oyster as don't know whether are they come to sale it again in the near future again or not and it can be kept for 1 year.



must cook oyster mixed rice, oyster hotpot and also oyster curry!!!


shipping cost and their sales profit, it's not too expensive thou.



it's oyster season now in Japan...
there'll be annual oyster festival in my place soon...

speed pullman

baking at night.
Pullman bread for sandwich =)


estimated 2 hours baking then, added dried yeast more and warm water + oven's proofing function.


Prima bread flour 60% + Organic Wholemeal flour 40%.



due to over proof, no taste, not so chewy and moist...


Other ingredients are :
*unsalted butter : 10g
*sugar : 10g
*salt : 3g
*Saf instant dry yeast : 2.5g
*warm water : 165g


1st and 2nd proofing 30mins, both were too long...bench time for 10mins, cover lid before bake then 200deg pre-heated, baked 30mins.

I took too long 2nd proofing and it was difficult to slid in lid then.



tips for baking nice bread in Singapore is to take long time proofing in room temperature. And use normal temperature water instead of warm water...if use warm water, dough becomes very not nice. Lazy like that.



By the way usually I take about 3 and half hours for baking.

Japanese Patissier

I happened to be at Tanjong Pagar,
so I bought cake from "Patisserie GLACE".

I heard from I think it was Japanese free magazine,
the chef was working at Mozart.
Guess it's one of my hometown's local cake & confectionery company. So somehow I feel like trying their cake.

The shop is recently relocated from China town square to ICON Village. Next to AMARA hotel.

I bought Choco Renga (chocolate Block).



light cake texture. it's definitely different from Singapore's.


layer of Chocolate sponge cake and dark chocolate cream.
it's not too sweet and smooth texture.


ah, forgotten...I am not fan of spongy cake...
Mozart cakes are mostly spongy cakes...


Maybe next time I would like to try Cheese cake as it seems like tasty =)

Shiu-chan suddenly feel like cooking
Buta shouga yaki (Ginger pork).


Well, let's cook it then.
I will bake buns for that.

It's me and his favorite dish.
and popular meal for Japanese too.


He used Pork Loin in block, thinly sliced it, season with ginger sauce.
pan fly then garnish grated gingers.


sweet ginger sauce is really nice with this pork...shiok!!


pork was tender, we love this sweetness.
nice with prima flour's bun and lettuce, too.

try again next time then! =)

high-tea at Ritz

first high-tea of this year,

@ Chihuly lounge.


I only came here before for afternoon tea.
this cozy and bright place, I think I like =)


finger foods...not bad. liked sandwitch.

Not too sweet yet not too heavy...

and, what impressed me most was...


ICE CREAM!!!


Guess what...cognac icecream with apricot bits...

colour like mocha or so, but it's cognac...


rum raisin icecream, mint chocolate icecream were also nice...vanilla icecream was no vanilla beans but very very thick vanilla flavour...but congnac...

I asked twice when the serving lady said it's congnac...I tought I heard wrongly or what.





Chatted and keep taking photos with friend...
I feel like going to buffet again soon...

indian's breakfast

Thosai,
I heard of this before but I haven't tried yet.


Come to try it.




It was thin and slightly crispy.


hint of yogurt sourness...




Shiu-chan ordered Masala Thosai for me.





I think I like it and prefer thosai than roti prata...



It is really nice discovery!!! =D

how should I read...

Lunch with friend's recommended cafe-restaurant.


It's the place where I bought Croissant.

Pizza was pretty big size, just nice to share with 3-4 persons.
we asked for "more greens", came out was look like "more chicken" =P



alot of shredded chickens, avocados and guess got cheese too.

much greens and much more chickens on the really very crispy pizza crust. It's nice to break with knife and eat it like chips...=)


And this is refreshing juice that my friend recommended.
with pomegranade and mint leaves.


cute bottle, she was keep saying quite ex! but tasty!!

mix of honey and sinammon too...
interesting taste and it's really quite refreshing.

there is quite number of nice cafe-restaurant around CBD.

baking in the night.

Suddenly thought of baking bread.


oh, remember last time I used to bake pound cake in the midnight...hahaha...



Breads are for my friend...


Haru yo koi 100%. used 135g water.


Beer bread with Royal Stout. Bake in 250deg is too high temp...


She likes bagels too.
As she always takes good care, I would like her to enjoy bagels...=)


I will bake bagels with her soon, I am very looking forward to it.

for picnic

Breads I baked for yesterday's potluck picnic.

ROYAL stout beer bread.

made 6 for this amount...petit size =P

Super camellia 90g + Bake king flour 70g,
organic wholemeal flour 20g
Organic wholemeal was finely milled so I choose to try that.

Royal stout was thick mild taste but not so strong beer aroma...so far I think Kirin stout and Guiness stout is the best for beer bread. Have strong beer aroma.


Butter rolls.

Think can brush more egg on top.

Super Camellia 130g + Bake king flour 50g.
fresh milk 40g.

Both breads were first time bake using Healsio...I need to check baking temperature and timing closely and need to keep on baking till I get use to it.

weekend picnic

relax weekends with friends...
potluck picnic at botanical gardens.


mel2 brought cute basket with complete set of picnic thing...
haha, he is really a very perfect person!!


so cute basket!! full of picnic needs inside =P

friends brought their dog, she is so cute too...=)


mel2 brought some roasted chicken, duck and pork frm Crystal Jade, another friend made some inari sushi and I brought some breads...


really tasty inari sushi these were...=D =D so oishikatta!!!

It was really nice potluck...
really relaxed and fun with friends...


by the way today, I first time saw the cicada in Singapore....
it was rather small...I was thinking the cicada should be quite big one...



gyy gyy cicada kind, it should be.

wine bagel

Used left over wine to bake bagels.

I have to test up Healsio's baking habit so that I can bake in best timing and temperature. Most of the time must know the oven condition.


peppery wine bagel. 50g wine + 80g water.


mixed Bake king 150g + super camellia 100g.
preheated oven 210dg for 23mins...I think I can reduce timing. abit side was charred.



250g bake king only. without milk but still not bad.

Also tried normal bread without fresh milk.
this is fine for 200deg 15mins bake.


Need to research Healsio more!!

tandori

I keep feeling like having indian food...something like spicy food...then cooked speed cooking tandori chicken.



This was sweet taste than last time recipe...i think yogurt was sweetened...


How come suddenly got feeling of having indian food....feel like going to Masala Ard or Muthu's curry or Melt ~The world Cafe~...or just donw stair's roti prata also can...haha



ahh...wanna go for buffet and eat as much as desserts and curries I want!!!!!!!!




......am I very stressed???

Pre-mix

Baked pre-mixed bread again, as wanted to let friends try.


shiu-chan's favourite bread pre-mix. dry tomato and basil?


Alsbaked plain roll, contains fresh milk.


100% Bake king bread flour with 50g milk

I realised that Bake king bread flour is most flavourful flour of what I have tried. but this flour is quite difficult to handle, maybe flour itself contains quite some moisture. have to reduce amount of water then.

Sake's accompaniment

When Shiu-chan visited my hometown last time, I introduced this.




don't know how many eel livers are in one stick.


Grilled eel liver (or intestine?)



Liver is bitter but sauce is sweet...mix of bitter and sweetness matches alcoholic drink, especially Sake.
I don't like most of alcoholic drinks, but I like those accompaniments.
'酒の肴 (Sake no sakana = snacks for sake)'



Shiu-chan get to experience this kind of funny and weird japanese food. too.

I started eating Wafers sometimes after start living in Singapore.



wrong Japanese spelling, it just like funny English in Japan. just like this blog!! =P


Loacker or kind of european made ones also nice but I prefer neaby countries as it can be eaten like light snack.


Remind me of wafers that I was eating when I was a child...

Never seen in my hometown

I found this car when I was on flat viewing.



should be "Garyu". looks abit like Rolls Royce then.


I have never seen Mitsuoka car in my place before...


Remember there was a showroom somewhere in Queens town but seems it closed for sometimes...where were they moved to???


Sometimes happen to see Mitsuoka car in Singaproe, if you bored finding Ferrari or Porche, why not find Hammer or Mitsuoka kind of rare-to-find in Singapore cars then? =)

Gift from Hawaii

My friend came back from Hawaii Vacation and gave us some gifts.

baked too long?

Shiu-chan tried to bake souffle,
Today it's my turn to try baking.


mine was no fresh cream then.


Cream
*Butter 15g
*Flour 15g
*Fresh milk 150g
*Egg Yolk 1

Meringue
*Egg white 2
*Sugar (Icing is better) 30g

180deg c steam bake for 25mins.



I think I baked too long...
very brown colour...

But when it just baked, it became very high.




melt in your mouth...soft and creamy



Is the souffle supposed to be like this???

Don't dare to eat Raw again....

It was long long waiting to go to Les Saveurs for me...


We went there for pre-celebration of getting our nest.
(Excuse, just wanted to go there only...=P)



It's been about half a year...
seems like they changed not only table settings but also buffet counter and its varieties.
It was super quiet moment....



Marinated Chicken, not too hard but not too soft...portion just nice size.



Desserts were lesser but better choice than last time.

I decided to try raw oyster...My hometown is so famous for oysters but I have not tried raw oyster in my life... (Shiu-chan said I tried once before at Aqua Marine...but don't remember that)
I was shocked as it was awful taste!!! I almost want to vomit out...=(


weird weird...I scared raw oyster already....

other things include main was still nice as previous visit,
but left as feel abit sad...


They are going to close buffet lunch???


Anyway if they return to serve lunch course again, it is still nice to go.

long hours "Coupe"

When I was still in Japan, I went to newly opened bakery nearby my house. I bought "Coupe", small version of baguette.


*French bread is named by weight, size and shape. Coupe is about 20cm, have only one Coupe on the bread.



should be nice with potage soup...


this coupe is bake with 20 hours proofing. smelled like using natural yeast but I am not sure.


their coupe is quite moist inside, and many air halls.
not bad I thought.


Look forward to try their table bread next time =)

Real ZUNDA.

When there was Miyagi or Fukushima Pref fair,
I bought its famous 'Zunda (green bean paste) mochi'.



nice natural light green colour. bean skin is carefully peeled.

Real zunda is more watery paste,
and it was very sweet.



My image of Zunda was not so sweet and more like paste. It was really a surprised impression.



Mochi was pretty hard texture.

DAIZU

My Favourite Doughnut shop's new product,
"Daizu Doughnut (Daizu = Soya bean)".



this is Kinako (bean flour) flavour...hope they will sale Tofu doughnut again...


It reminds me of Tofu doughnut.


I thought it is just like Tofu dougnut kind of cake doughnut but it is yeast doughnut. texture was soft and more moist than normal yeast doughnut.




I couldn't feel soya bean taste but not bad thou =)

Qiji's popiah

feel like having popiah, and we stepped into there @ Funan. it's been quite sometime since we went there last time. their popiah was nice as last time.


not too thick but not too thin skin.

by the way shiu-chan, looks like wants to try their Nasi Lemak next time...I maybe want to try Soon Kueh next time...

Custard Souffle

Seems like really shiu-chan enjoy cooking nowadays.


today, he tried to bake 'Souffle' from his favourite chef, Gordon Ramsay's recipe. I think cheese souffle is more popular souflle than the normal souffle in Japan.



We couldn't make firm meringue well as egg wasn't cold enough. but luckily the souffle became up...




well done for first time bakingb =)


Maybe baking time was not enough but it looks pretty good in first time, isn't it?

Happy New Year!



Thank you very much for your help and kindness in 2009 for all my friends, relatives and my family and wishing for your health and wealth in 2010.





my hometown was snowing heavily this new year. I was supposed to be celebrate new year but somehow I celebrate new year in Singapore...Next year I must celebrate new year with my mum in my hometown.



I made Osechi, new year dish.
some of them, I bought as buying is cheaper just as same as Japan.

I didn't bring back special meal box for new year dish from japan, I displayed them on the plate.



made Sushi roll, Pickles, prawn, Kazunoko and Rock Egg roll.


Also cooked Ozouni soup with oysters.



shiu-chan fighted w unshell oysters. tasted not bad.


half a dozen costed $14.90 with shell. expensive but no choice and it's new year, only do this year...hahaha...



Oyesters were from Australia/NZ.
tasted not bad =)




hope this year will be better year for us, too...
